Chocolate is made from cacao beans, with the rest of the plant - pods, the fruit pulp around the beans etc - usually going into trash.
Now, Barry Callebaut, a leading Swiss chocolate maker, has figured out a process by which almost all the ingredients from cacao are used to make the chocolate.
Called the WholeFruit chocolate, it is a fresh, fruity delight from the chocolate maker in which the fruit pulp has also been used as an ingredient.
An excellent move, the chocolate will taste much better now for the sustainability minded.
